Their cuisine is based on two basic principles: respect for traditional local recipes with an excellent selection of ingredients.
Among the house specialities, we would highly recommend their careful selection of different meats and fresh fish. Special mention for the Iberian meats (Iberian pork shoulder and sirloin), lamb and suckling kid, beef or cod.
It is also one of the most recommended places to enjoy seasonal mushrooms and asparagus. They are specialists in selecting and cooking these local ingredients which you can taste in various forms. Either salted, scrambled, with foie, with cod, with Iberian pork should or in pâté.
Finally, we would also like to mention some of their special dishes which include some selected cheeses from the Sierra de Cádiz. Among them, we would highlight their Payoyo cheese selection, which tastes specially good when grilled. Moreover, it is perfect to be combined with some of the wines from their excellent wine cellar.
